Description

These delicious thin flatbreads can be prepared at any time of the day, as they are perfect for breakfast, lunch, or dinner. You can also bake them at home and take them outdoors, then reheat over a campfire—they'll taste even better! The flatbreads are easy to make, and the filling can be anything you like. Let me tell and show you how. Serve them with tea or coffee.

    For the filling, boil the potatoes in their skins, then peel and mash them. Grate the cheese and finely chop the herbs. Add salt to taste and ground pepper. Mix well.

    Pour the kefir into a bowl, add salt and baking soda. Mix.

    Add the flour. It's better to add 2 cups of flour at once, then add more as needed. Kefir can be thicker or thinner, and flour also varies.

    And knead the dough until it is soft but does not stick to your hands. Let the dough rest for 5–10 minutes, then knead it once again.

    Divide the dough into small pieces. The size depends on the pan you'll use to cook the chudu. My pan is 20 cm in diameter, so I divide the dough into 9-10 pieces.

    There are two ways to shape the chudu. The first way: roll out a small piece of dough into a little flatbread, place a tablespoon of filling in the center.

    And gather the edges of the flatbread together, pressing with your palm.

    Then, carefully and gently with a rolling pin, without letting the filling escape, roll out into a thin circle. The diameter should match that of your baking pan. If the filling does happen to poke out in a few spots, it's no big deal.

    And the second method: roll out a piece of dough into a very thin round, and spread the filling in a thin layer over half of it.

    And cover with the second half of the flatbread (like a cheburek). Then roll the flatbread again with a rolling pin to release the air and make the chudu thinner. My filling is thick, so I didn't crimp the edges—they stuck together perfectly during rolling.

    Heat a dry (!!!) skillet over medium-high heat and place the chudu on it.

    Fry on both sides. If they puff up, carefully prick them to let the steam out.

    Transfer the fried chudu to a plate and brush with butter.
