Ingredients: Cream cheese, sugar, lemon juice, vanilla extract, egg yolk, whole egg, heavy cream or sour cream. The ratio of these ingredients will determine the final flavor (tangy or sweet) and texture (dense or fluffy). This recipe begins with a quick crust preparation. Gather 4 ounces of crackers, 1 tablespoon of granulated sugar, and 4 tablespoons of melted butter.

To crush the crackers into small pieces, place them in a food processor.

Grind crackers for 10 seconds. Alternatively, crush them by pressing inside a plastic bag. Then, in a medium bowl, mix sugar and butter with the crackers until moistened.

Melt one tablespoon of butter and use half of it for a 10-inch baking pan. Then pour the cracker mixture into the pan. Press the mixture with the back of a glass to make the surface perfectly smooth.

When the cake becomes fragrant and looks golden-brown, remove it from the oven to cool. Once the cake has cooled, use the remaining butter to brush its sides.

Filling, Ingredients: 2-1/2 pounds cream cheese, 1/2 cup heavy cream, 1-3/4 cups granulated sugar, 1/8 teaspoon salt, 2 teaspoons lemon juice, 1 teaspoon vanilla extract, 2 large egg yolks, 6 large eggs.

Cut the cream cheese into small pieces and place it into a mixing bowl. Mix for 2-3 minutes until smooth and uniform. Next, add salt and 1/3 of the sugar. Continue mixing. Add another third of the sugar. Mix again. Add the remaining third of the sugar and 3 tablespoons of flour (for stability). The added flour will not affect the taste or texture of the cake, but will reduce the likelihood of cracks. Add lemon juice and vanilla extract. Mix well.

Mix and add heavy cream.

Now add all three eggs and mix. Continue mixing, then add the remaining 3 eggs. Pour the mixture into a pan with the chilled crust. Place the pan in an oven preheated to 500°F.

Bake the cheesecake for 1 hour and 40 minutes, making sure the internal temperature of the cake does not exceed 150°F. Remove the cake from the oven. Let it cool for 10 minutes. Run a knife around the edges of the cake pan. Cool the cake for another 2 hours, then wrap the pan with the cake in a plastic bag and place it in the refrigerator for 5 hours.
