Instructions
- 1
Step 1

Prepare the listed ingredients. It is advisable to use chocolate shortbread cookies. Instead of sour cream, you can use 30% fat cream, but it should be store-bought, not homemade.
- 2
Step 2

Break the cookies into pieces and grind them into crumbs in a blender bowl or in a sturdy plastic bag using a rolling pin.
- 3
Step 3

Melt the butter and mix it into the crumb mixture. Transfer the mixture to a baking pan and spread it evenly, pressing it up the sides as well. This will be the cheesecake base.
- 4
Step 4

Next, prepare the filling. Place the cottage cheese and sour cream (or heavy cream) into the blender bowl, add sugar, and crack in the chicken eggs. You can add a little vanilla sugar for flavor. Add salt, as it will enhance the sweetness of the filling.
- 5
Step 5

Blend everything into a homogeneous mixture using an immersion blender.
- 6
Step 6

Pour the prepared filling into the mold and place the mold in the oven on the middle rack at 180 degrees.
- 7
Step 7

Bake the cheesecake for about 35–40 minutes until golden brown. Check for doneness by the firmness of the filling—it should not be liquid. Then remove the cake from the oven and let it cool in the pan for at least 2–3 hours in the refrigerator.
- 8
Step 8

After this, remove the cheesecake from the pan and let it cool slightly. As it cools, the filling will become denser.
- 9
Step 9

Decorate the cottage cheese cheesecake and serve it at the table.
