
Cherry Cheesecake
Description
The recipe won't take much time. It's a delicious dessert that requires no special skills to prepare and doesn't need to be baked. The cherry cheesecake base is made from cookies. Serve chilled.

1. Prepare a cake pan for the cheesecake. Grease it with melted butter or line it with parchment paper. Crush the cookies into fine crumbs using a rolling pin, then mix with melted butter. Transfer the mixture into the pan, press it down firmly with your hands, and form low edges around the sides.

2. Whip the cream in a mixer. Add ricotta, sugar, and lemon zest to it. Mix everything thoroughly using a wooden spoon.

3. Pour the gelatin into the lemon juice and heat it in a water bath, stirring constantly. The gelatin should completely dissolve in the juice. Pour the prepared gelatin into the cheese mixture and mix well. Pour the ready mixture into the mold with the cookies, smooth it out, and refrigerate for several hours.

4. Pour the cherry juice into a separate container and boil over low heat until reduced by one-third. Let the juice cool. Place canned cherries on the prepared cheesecake and pour with the syrup.
