
Cheesecake with Raspberry and Chocolate
Description
The recipe won't take much time. This cheesecake is made in Britain and Australia. It's prepared with cream cheese, chocolate, and other ingredients. Raspberry is used as a decoration for the cheesecake and is also added to the cream cheese. Try it—you won't regret it. Serve chilled.

1. Preheat the oven to 180 degrees. Melt the butter over low heat. Take the cheese out of the refrigerator and place it on a plate. Let it sit for 15 minutes at room temperature. Melt the chocolate using a double boiler. Crush the cookies. Grease the baking pan with butter. Place the cookie crumbs into the bottom of a bowl and pour in the melted butter. Mix thoroughly with a fork. Transfer the mixture into the baking pan and spread it evenly across the bottom. Press the crumbs down first with a fork, then with your hands. Place in the preheated oven for 20 minutes, then let it cool.

2. Beat the cream cheese, sugar, and zest with a fork until well combined, about 2 minutes. Pour 75 ml of boiling water into the gelatin and let it dissolve. Add the dissolved gelatin to the cream cheese mixture, then stir in the melted chocolate and mix thoroughly. Whip the cream with a fork for about 1 minute, then fold it into the mixture.

3. Pour one-third of the cheese mixture over the cookie crumb base. Place raspberries on top of the mixture, then pour the remaining two-thirds of the mixture over the raspberries.

4. Carefully cover the cheesecake and refrigerate for at least 3 hours to set. Remove from the mold. Decorate the top with raspberries.
