No-bake kiwi cheesecake
Description
Perfect with tea and coffee. A no-bake dessert — every hostess's dream! Today I decided to quickly make a cake without turning on the oven. I had some leftover crumbly cookies in a package, which worked perfectly for the crust. Overall, I spent about forty minutes preparing this light and summery cheesecake! Not too much time, right? Serve warm or chilled. Ideal with tea.

Step 1

Crush the cookies into crumbs. Melt the butter over heat, then cool it and mix with the cookies. Form the dough and spread it evenly into a baking dish lined with plastic wrap. Refrigerate.

Step 2

Dissolve the kiwi-flavored gelatin in water. Let it set in a smaller mold, then add chopped fruit. Mix milk with gelatin and let it swell. Heat it up, waiting until the gelatin completely dissolves. Then combine the milk with sour cream and sugar. Place the set kiwi mixture onto a layer of cookies and pour the cooled milk-gelatin mixture over it.

Step 3

Leave the cake in the refrigerator overnight. Before serving, sprinkle the cheesecake with grated milk chocolate. Coconut flakes also work great. Enjoy and have a summery mood!
