
Cheesecake with ginger crust
Description
Perfectly pairs with tea and coffee. In classical cuisine, cheesecake is essentially a curd soufflé on a base made of crushed cookies. There are many cheesecake recipes, and not only the base composition varies, but also the filling. The base can be made from unsalted crackers, sponge cake, or shortcrust pastry. The filling usually consists of cottage cheese or cheese, to which berries, fruits, liqueurs, cocoa, vanilla, or honey are added. Can be served with tea or coffee.

1. Crumble the ginger cookie into fine crumbs, add 6 tbsp of butter, 2 tbsp of sugar, and a pinch of salt. Mix until a pliable dough forms, then bake the crust for 10 minutes at 180°C.

2. Using a mixer, beat the cream cheese, sour cream, a cup of sugar, salt, eggs, lemon juice, and vanilla extract.

3. Carefully pour the butter mixture over the cake layer and spread it evenly to the edges.
