
Guava Cheesecake
Description
The recipe won't take much time. Despite using egg whites, low-fat cream cheese, and fat-free yogurt in this cheesecake, it still turns out incredibly tender and creamy.

1. Preheat the oven to 190 degrees. Wrap the bottom and outer sides of the pie pan with a double layer of foil.

2. Place the crackers in a food processor and grind. Sprinkle with olive oil and mix.

3. Place the resulting mixture into the prepared oiled pan. Bake at 190 degrees for 8 minutes, then let cool on a rack. Reduce the oven temperature to 160 degrees.

4. Drain the syrup from the guava. Place the guava in a food processor and blend for 1 minute until smooth.

5. Mix 1 cup of sugar and cream cheese in a large bowl, beat with a mixer at medium speed until smooth.

6. Add yogurt, vanilla extract, and salt. Add eggs, one at a time, beating after each addition.

7. Place the egg whites in a bowl and beat with a mixer at high speed until foamy.

8. Add the whipped egg whites to the cheese mixture.

9. Spread the resulting mixture over the cooled pie crust.

11. Gently swirl the tip of a knife to create a beautiful pattern. Place the pie pan onto a baking sheet. Add hot water to the baking sheet, filling it to about 5 cm deep. Bake the cheesecake at 160°C for 50 minutes. Turn off the oven. Let the cheesecake stand in the closed oven for 30 minutes. Remove the cheesecake from the oven.

13. Remove from the mold and cool on a rack. Chill for 8 hours, slice, and serve.
