
Cheesecake with homemade cream cheese
Description
The recipe won't take much time. This wonderful cheesecake is especially desirable during summer days—it refreshes perfectly and keeps you full for a long time. Serve the dessert chilled, accompanied by various beverages. Keep in mind that the cheesecake needs at least 2–3 hours to set. Serve chilled.

Prepare the listed ingredients. Chill the cream cheese before starting preparation.

Crumble sponge cake or biscuit into a deep container and add softened butter. Optionally, melt the butter in the microwave. Mix thoroughly until you have a uniform mass.

Press it into the bottom of the cheesecake pan, slightly up the sides as well.

Soak the gelatin in hot water and leave for 5 minutes. Then stir, lifting it from the bottom of the container.

Puree the cream cheese together with the cream, sugar, and water with dissolved gelatin. Optionally, you can add 1/2 tsp of vanilla sugar.

Pour the entire mixture into a mold and tap the mold several times against the work surface to release any air bubbles. Place the mold in the refrigerator for at least 2–3 hours.

Trim the edges with a warmed knife and remove the mold. The homemade cream cheese cheesecake is completely ready!

Garnish with sliced peaches and blueberries, and fresh mint leaves.
