
Cheesecake with agar-agar

The recipe won’t take much time. You can make a no-bake cheesecake not only using gelatin, but also with agar-agar. It’s very simple; this step-by-step recipe will help you prepare this treat. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Pour milk over the agar-agar to let it bloom.

Place the cookies in the blender bowl and grind them into crumbs.

Pour the melted butter into the crushed cookies and mix until smooth.

Prepare the mold (I use a 23 cm pastry ring). Place the ring on a firm surface, such as a cutting board, wrap the bottom with plastic film or line it with parchment. You can line the perimeter with acetate tape. Spread the crumbs over the bottom of the mold, level and compact them, then place in the freezer for 30 minutes.

While the cake layer cools, whip the egg white with half of the granulated sugar until stiff peaks form.

In another bowl, place mascarpone, soft cottage cheese, and the remaining sugar.

Whip the cottage cheese mixture until creamy.

Add the beaten egg white to the cottage cheese mixture and gently fold it in with a silicone spatula.

Remove the zest from the lime and squeeze out the juice.

Remove the zest from the lemon and squeeze the juice from one half; you can squeeze a whole lemon if you want a more tart dessert flavor.

Divide the mixture into 2 parts; add lemon zest and lemon juice to one part. Spread it as the bottom layer over the prepared butter-and-cookie base. Place in the refrigerator for about 15–20 minutes.

Add the lime juice and zest to the second half; if desired, you can add a drop of green food coloring. Spread the cream into the mold as the second layer. Place it in the refrigerator again to set.
