
No-bake cottage cheese cheesecake with gelatin

The recipe won't take much time. I often make this cheesecake for family celebrations. Recently, we celebrated our wedding anniversary, and this recipe immediately came to mind. I was tired of baking and didn't regret deciding to keep things simple. The cheesecake has a royal taste. Serve it warm or chilled. Perfect with tea.

Pour cold water over the gelatin and leave to soak for half an hour. Mix the finely crushed cookies with butter and knead. Press the mixture onto the bottom of a mold, form the edges, and place in the refrigerator.

Heat the cream and mix with gelatin and sugar. Heat over the stove without bringing to a boil, stirring constantly. Cool, then combine with lemon juice, cottage cheese, lemon zest, and whip. Pour the mixture over the cake base and refrigerate for a couple of hours.

Place the cherries on top, gently pressing them down, and put the cake in the refrigerator for another two hours. The delicate cake is ready to enjoy!
