
No-bake cheesecake
Description
The recipe won't take much time. Cheesecake is a creamy dessert made with a biscuit base and soft cream cheese (cottage cheese). With the help of berries, fruits, and other ingredients, you can give it any flavor you like. It's inexpensive to prepare, nutritious, and most importantly, very healthy—especially for children who need calcium but can't stand cottage cheese. The special feature of this recipe is that we don't use the oven at all. Serve it cooled or slightly warm.

1. Soak the dry gelatin in 2/3 cup of warm water and let it sit for 10 minutes. In a bowl, mash the cottage cheese, add cream and sugar, then mix. Wash the orange, grate the zest, squeeze the juice from one half, and add both to the cottage cheese mixture. Blend with a mixer until smooth and lump-free, then stir in the gelatin.

2. Crush the shortbread cookies into fine crumbs using a blender or rolling pin. Mix the crumbs with softened butter, then press the mixture into the bottom of a pan to form a crust.

3. Carefully pour the prepared cottage cheese mixture into the mold with the shortbread base, and evenly spread it with a spatula.

4. Slice the remaining half of the orange into thin pieces and arrange them on top of the cottage cheese cream. Place the cake in the refrigerator for 2 hours (or overnight). Remove the finished cake from the mold and serve.
