
Beet Chips in the Oven
Description
It works for both special occasions and everyday meals. For the chips, choose medium or small beets—they are less fibrous and sweeter. If you want the chips to be lower in calories, leave out the oil; they will still taste great.

Prepare all the necessary ingredients. Peel the garlic and beets, wash them, and pat dry.

Slice the beets into thin round slices. If you have a special grater, this will be simple and quick; it is also quite easy to do with an ordinary knife with a long, sharp blade.

Transfer the beets to a deep, roomy bowl, pour in the olive oil, and sprinkle in medium-grind sea salt.

Thoroughly mix so that all beet slices are lightly coated with oil.

Line a baking sheet with parchment paper, arrange the beet slices on it, and bake in a preheated oven at 140°C for 30 minutes on the convection setting. Leave the oven door slightly ajar; you can wedge a wooden spatula in it to help the moisture evaporate faster.

After some time, remove the baking sheet from the oven, sprinkle the beet slices with dried oregano and thinly sliced garlic. Return the beets to the oven for another 30–40 minutes.

Cool the finished chips and transfer them from the baking sheet to a plate.
