1. Wash, dry, and slice the tomatoes, then place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

2. Place in a preheated oven at 200 degrees for about half an hour.

3. Meanwhile, peel and dice the remaining vegetables. Add them to the heated oil and sauté for about 5 minutes.
