
Chinakhi Ukrainian-style
Description
The dish is prepared without unnecessary complications. Chynahy are made in Ukraine and other countries (Georgia, Abkhazia). The Ukrainian version of the dish differs in the type of mushrooms and an unusual sauce. The finished dish can be served at the table.

Grate the carrot on a grater.

Dice the onion.

Cut the chicken meat into small pieces.

Mix the chicken meat with salt and spices. Stir. Heat a pan with oil, then sear the meat on all sides.

Place the fried meat into the pots.

Fry the onion in vegetable oil.

While the onion is frying, peel and dice the potatoes.

Add the carrots to the onion and sauté together.

In the pot, on top of the meat, place sliced potatoes, using 1.5–2 potatoes per pot.

Place the sautéed mixture on top of the potatoes.

Soak the white mushrooms in boiling water for 20 minutes. Then remove them from the infusion. Rinse the mushrooms under running water. Cover with boiling water and boil for 10–15 minutes.

Slice the mushrooms and place them in each casserole dish.

Strain the mushroom broth through cheesecloth. Mix it with tomato paste or tomato juice. Add salt and spices to the resulting liquid (chinkali is quite a spicy dish). Place the liquid over heat and bring to a boil. Pour the boiling liquid into the pots, making sure the water level is higher than the level of the ingredients.

Place the covered pots in the oven and bake for about 1.5–2 hours at 200 degrees until the potatoes are cooked.
