
Chimichurri
Description
Perfectly complements meat, poultry, and side dishes. A sauce made with fresh herbs and vegetable oil is an excellent addition to any dish or appetizer. To prepare the sauce, all ingredients are finely chopped and mixed together. Chimichurri can be stored in the refrigerator, but should be left at room temperature for a while before serving to prevent the olive oil from becoming too thick. It's best, however, to prepare it just before use. The finished sauce can be stored in the refrigerator for several days.

Wash and dry the parsley, then trim the stems and finely chop the leaves.

Use fresh or dried oregano. Place parsley, dried oregano, and a few cloves of garlic, pressed, into a container.

Pour vegetable oil over everything, add wine vinegar, season with salt and pepper to taste, and add red pepper flakes. Mix well.

Serve the finished sauce at room temperature.
