Indian cuisine places special emphasis on various spices and seasonings, probably due to their abundance in this country. Fortunately, you don't have to travel to India to taste this exotic, colorful local dish. Nowadays, you can easily prepare it at home. Serve hot.

    Let's start with the chicken fillet. Rinse it and cut into pieces. It's best to slice lengthwise. Place the chicken onto a frying pan greased with sunflower oil. Stir. Put it in the oven at 180 degrees Celsius for 20 minutes. Alternatively, you can simply fry the chicken in a pan.

    Take a frying pan with high edges. Heat 3 tablespoons of sunflower oil. Add cumin, bay leaf, cloves, cardamom, and a cinnamon stick. Fry for two to three minutes. Add chopped onion heads and fry again. Then finely chop the garlic and dice the tomatoes. Add them to the pan and fry until the tomatoes are completely softened.

    Remove the chicken fillet from the oven. Place it in a pan with the vegetables. Sprinkle with ground coriander, turmeric, and chili pepper. Mix everything and simmer over low heat for about three minutes.

    Remove seeds from the bell pepper. Cut into small cubes. I used green pepper for contrast. Place in a frying pan and simmer for five minutes, stirring the stew. Take out the cream and pour it into the vegetables with the chicken. It's better to use thicker cream so that it doesn't curdle.

    Now the final touch, which gives the dish its name. We'll need an Indian spice blend called garam masala. It includes ginger, onion, garlic, and chili pepper. Mix everything well and simmer for another three to five minutes. Before serving, remove the cinnamon stick and bay leaf. Serve as is. Enjoy your "Chicken Masala"!
