
Chii-chudu
Description
Perfectly pairs with tea and coffee. In Dagestan, these flatbreads are traditionally filled with spices and pumpkin, feta cheese with herbs, vegetables, and even spicy salted cottage cheese. The dough turns out quite plain and thin. I'm sure this dough would also work well with sweet fillings—pumpkin with cinnamon, for example. Experiment and share your impressions. Serve cooled or slightly warm.

Add a pinch of salt to the sifted flour and gradually pour in a glass of water, kneading the dough.

It should be soft but firm. Let the dough rest for 20 minutes.

While the dough is "resting", prepare the filling. Peel the onion and chop it finely, then mix it with the meat and add spices to taste. Add the egg to the meat mixture and combine with finely chopped herbs. Roll the dough into a sausage shape and cut it into small 2 cm thick pieces. Roll each piece into an oval flatbread, place the filling on one side, then fold the other side over and seal the edges.

Bake the chudu on a dry hot skillet on both sides.
