
Garlic sauce with shrimp
Description
Minimal ingredients — excellent result. In a small bowl, mix flour, salt, pepper, and cayenne pepper. Stir thoroughly. Coat the shrimp in the flour mixture. In a large skillet, cook the floured shrimp in olive oil for 5 minutes over high heat. Stir frequently to prevent burning. Using a slotted spoon, transfer the shrimp to a serving dish. In the same skillet, sauté garlic, shallot, parsley, and oregano over medium heat for 3 minutes, stirring constantly. Spoon this mixture over the shrimp. Preheat the broiler to medium heat. Pour wine and brandy into the skillet and ignite with a match or lighter. When the flames subside, stir and pour the sauce over the shrimp. Place the dish with shrimp under the preheated broiler for about 2 minutes. The finished sauce can be stored in the refrigerator for several days.
