Garlic Scapes for Winter

Description
Perfect for winter stockpiling. One way to preserve garlic scapes for winter is freezing, but before freezing it’s best to boil the scapes for a couple of minutes, then freeze them. You can then use them after thawing in salads, main dishes, or as appetizers. Store in a cool, dark place.

1. Use young garlic scapes; older ones won’t do—they get very tough, and cooking won’t fix that. Snap off the tops (where the seeds form).

2. Thoroughly wash the garlic scapes.

3. Cut the garlic scapes into small pieces.

4. Boil in salted water for 2–3 minutes.

5. Drain in a colander.

6. Let the shoots cool slightly, then place them in a bag. Remove as much air as possible and tie the bag shut.

7. Place the packet in the freezer. Store until needed.
