
Black sponge cake
Description
The recipe will not take much time. I baked the sponge cake in a 16 cm springform pan. This sponge is perfect for homemade little cakes. Serve warm or chilled. Ideal with tea.

Lay out all the ingredients on the table at once.

Very carefully separate the eggs into yolks and whites, placing each in a separate dry small bowl.

In a roomy bowl, place all the egg yolks and add icing sugar.

With a mixer, beat the egg yolks with confectioners’ sugar until the mixture turns pale.

In a separate dry bowl, beat the egg whites with a mixer until stiff peaks form.

Add the egg white mixture to the egg yolk mixture. Fold one mixture into the other.

Sift the cocoa powder into the egg mixture.

Stir in the cocoa, add gel food coloring.

Mix it in until evenly distributed.

Sift the flour and fold it in until you have a smooth, airy dough.

Line the bottom of the tin with baking parchment, then spread the dark sponge cake batter on top. Bake the sponge in an oven preheated to 180°C for about 25 minutes.

The finished sponge cake is about 4 cm tall. Slice it only after it has cooled completely.
