
Blackcurrant kissel
Description
The recipe won't take much time. Blackcurrant kissel is easy and quick to prepare. Adjust its thickness by varying the amount of starch. In my recipe, the kissel turns out moderately thick. If you prefer a thicker consistency, add more starch. Thick kissel works well as a sauce for cottage cheese pancakes, pancakes, or blinis. Serve chilled.

Wash the blackcurrants thoroughly. First, remove any spoiled berries, leaves, and twigs. Place them in a saucepan.

Pour water over the currants.

Place the pot over heat, bring to a boil, then reduce the heat and simmer the currants for 15–20 minutes. Then, mash the berries directly in the pot.

Add sugar to taste, mix well.

Strain the currant decoction with sugar.

Put the potato starch into a small bowl.

Add 100 ml of water and mix well until the starch is completely dissolved.

Bring the strained blackcurrant broth to a boil and add the diluted starch. Cook for 2-3 minutes, constantly stirring, until thickened.
