
Blueberry Cottage Cheese Pie
Description
Delicious pastry for the whole family. The base is short pastry, and the filling is lots of blueberry with a cottage cheese–sour cream mixture. I baked this blueberry pie in a 26 cm diameter tin. I’ve baked the same pie with blueberries too, and it turns out amazingly delicious as well. It goes well with tea or coffee.

Lay out all the ingredients on the table. Sort through the blueberries and rinse them.

First make the dough. Put the flour in the blender jug, add the butter and sugar, and crack in the eggs.

Run the appliance for approximately 1 minute.

Then, for convenience, gather the blender bowl contents into a ball—you get soft dough that doesn't stick to your hands.

Line the bottom of the pan with baking parchment and spread the dough with your hands so that you form a base and sides about 4–5 cm high. Prick the flat surface of the dough with a fork. Bake the pan with the dough base in an oven preheated to 180°C for 15 minutes.

Meanwhile, prepare the pie filling. Into a roomy bowl put the cottage cheese, sour cream; beat in the eggs; add the sugar and vanilla.

With an immersion blender, blend these ingredients until the mixture is smooth and uniform.

Take the tin with the par-baked base out of the oven and spread blueberries in a generous layer on top.

Pour over with the cottage cheese mixture and bake in an oven already preheated to 180 degrees for 40 minutes.

Let the finished pie cool completely, then cut it into serving pieces.

The baked goods are ready. Serve with tea.
