
Blueberry mousse for cake

Any dessert made with it will surely attract your guests' attention. Blueberry mousse is perfect for a chocolate cake and looks very elegant. The finished dessert can be served immediately.

Place clean, washed, and dried blueberries into a blender and puree them.

Transfer the puree to a saucepan, add sugar and agar-agar. Place on the stove and heat over low heat. Bring to a boil, then turn off the heat. Agar-agar can be substituted with 2 tsp of gelatin soaked in cold boiled water.

Let the purée cool down while we work on the cream. Whip the very cold cream with powdered sugar. You can place the bowl you'll use for whipping the cream in the freezer beforehand.

Mix the cooled purée with whipped cream — and whip once again.

Transfer to a mold or, as I did, a small saucepan. Place in the freezer. After about 40 minutes (or maybe even less), you can use the mousse for assembling the cake.
