
Blueberry curd
Description
The recipe won't take much time. This homemade blueberry curd is a real find for baking lovers! It turns out very rich—I personally can't eat it "plain," but it's perfect for decorating baked goods, pies, and pastries! Be sure to try it, I highly recommend. Serve chilled.

1. Place the berries in a saucepan, add sugar, juice, and zest of one lemon. Bring to a boil and simmer over low heat for 10 minutes. Remove from heat and mash into a puree. Try to remove the pulp as thoroughly as possible.

2. Transfer back to the saucepan and continue cooking, preferably using a double boiler.

3. Beat the eggs and pour them into the berry mixture. Gently stir and continue cooking until thickened.

4. When the mixture becomes very thick, add the butter and stir until it melts completely. Store the curd in the refrigerator.
