
Blueberry cream with butter
Description
The recipe won't take much time. Since this cream is quite fatty, I'd advise not eating it plain, but rather spreading it in a thin layer over cake layers. By the way, if you prefer sweeter baked goods, you can add more sugar to the cream, as it turns out rather tangy. Serve chilled.

Step 1

1. Wash the blueberries and place them in a saucepan. Simmer for 10 minutes until soft and juicy. To prevent burning, you can add 50 ml of water.

2. In a separate bowl, beat egg yolks with sugar and flour until smooth. Let the blackberries cool and mash them into a puree, trying to remove large berry pieces.

3. Combine both mixtures, stir, and place over heat. Simmer for another 10 minutes, until it begins to thicken. Then remove from heat, quickly add a piece of butter, and stir until completely melted.

4. And the time is ready! Perfect for honey cakes, sponge cakes, and even "Napoleon"!
