
Blueberry kissel
Description
This jelly can be made from both fresh and frozen berries, which do not need to be thawed beforehand. If desired, you can add a little cinnamon or cardamom to the jelly. You can use either potato or cornstarch. The jelly goes perfectly with cheese pancakes or blintzes.

Prepare all the necessary ingredients for making blueberry kissel. Wash the orange thoroughly in hot water and dry it completely.

Sort the berries, removing debris and spoiled ones. Wash the blueberries and drain in a colander to remove all water.

Place the blueberries in a heavy-bottomed saucepan. Grate the zest from the orange and finely chop it, then add it to the berries.

Cut the orange in half, squeeze the juice from one half, remove any seeds that may have fallen in, and pour it into a saucepan.

Add sugar to the berries, juice, and zest.

Place the saucepan over low heat and simmer for 5-7 minutes after boiling, stirring constantly.

Dissolve the starch in cold water until smooth.

Stirring the mixture, slowly pour in the starch in a thin stream.

Stirring constantly, cook over low heat until thickened and translucent. The mixture should begin to bubble and the starch should be fully cooked. Remove the pot from the heat and let it cool completely.
