
Blueberry cheesecake with nuts
Description
Homemade baked treat for tea. This dessert can be prepared on a hot summer day when you don't feel like turning on the oven. Blueberries can be replaced with any other berries, such as cherries, raspberries, or strawberries. This dessert turns out very tasty and looks impressive, especially when sliced. I've replaced the traditional shortbread or cookie crust with nuts, giving this familiar dessert a whole new twist. Serve with tea or coffee.

1. Put almonds, coconut flakes, dates, and lemon juice (2 tablespoons) into the blender container.

2. Grind the contents of the bowl into crumbs; the mixture should be crumbly.

3. I have a silicone mold, I place the nut mixture into it and press it down firmly with my hands.

4. Soak cashews in cold water for 3 hours, then drain the water and transfer them to a blender jar. Add cottage cheese (200 grams) to the jar, along with honey (5 tablespoons), vanilla, and lemon juice (3 tablespoons). Blend until smooth. Spread this mixture over the nut layer.

5. Mix blueberries with cottage cheese (100 grams) and the remaining honey (3 tablespoons), then blend in a blender. Spread the blueberry layer over the cottage cheese layer.
