
Blueberry cheesecake
Description
Homemade baked goods for tea. You can mix the cheesecake batter simply in a blender, but once you add the blueberries, you can't use the blender anymore. The dough should be gently mixed and carefully transferred into a baking dish. See my recipe. Serve cooled or slightly warm.

1. For making cheesecake, we need dry and fatty cottage cheese. Place it in a bowl.

2. Add 5-6 tablespoons of sugar and 3 eggs to the cottage cheese. Mix the sugar with the cottage cheese. You can add vanilla.

3. Beat the mixture. The cottage cheese will release whey. Add semolina to the cottage cheese. Mix well.

4. Add washed and sorted blueberries to the resulting mixture. I use frozen ones. Gently mix the blueberries into the batter.

5. Place the resulting dough into a greased pan. The wider the pan, the lower the cheesecake will be, but the crust will be browner.

6. Preheat the oven to 180 degrees. Bake the cheesecake for 40 minutes. While it's baking, prepare the chocolate caramel cream. Place cocoa in a saucepan, add 1-2 tablespoons of milk and 2 tablespoons of sugar. Put the mixture over heat and, stirring constantly, bring to a smooth consistency. The sugar will begin to melt and the glaze will quickly become liquid.

7. Add 50-70 g of butter to it. Remove the icing from the heat and mix thoroughly with the butter until it is completely dissolved. This will make the icing glossy.

8. Pour the prepared glaze over the warm cheesecake.

9. The blueberry cheesecake is ready. Slice it with a sharp knife and serve. Caramel pairs perfectly with blueberries. I recommend serving this cheesecake with milk, unsweetened coffee, or tea.
