
Blueberry pancakes with yogurt
Description
The recipe won't take much time. Fluffy berry pancakes will delight the whole family for breakfast. Serve chilled.

1. Wash and dry the blueberries. Melt half of the butter. Remove from heat and mix in the second tablespoon of butter until melted.

2. Whisk the eggs and yogurt together in a medium bowl. If you are using liquid yogurt, there is no need to add milk. If you are using regular yogurt, add 2 tablespoons of milk. If you are using very thick yogurt, such as Greek yogurt, add 3 to 4 tablespoons of milk. Add melted butter, lemon zest, and vanilla extract. Whisk to combine. In a separate small bowl, mix flour, sugar, baking powder, and salt. Add the dry ingredients to the egg mixture and stir until combined.

3. Preheat the oven to 90 degrees and place a baking sheet inside. Heat a skillet over medium heat. Melt a piece of butter and spoon the batter onto the skillet (about 3 tablespoons per pancake), leaving space between them. Place several berries on the surface of each pancake and gently press them in.

4. When the pancakes become dry around the edges, after about 3-4 minutes, flip them and cook for another 3 minutes until golden brown on all sides. If the pancakes brown too quickly, reduce the heat.

5. Place the pancakes in a warm oven to keep them warm. Keep them there until ready to serve. If desired, sprinkle the pancakes with powdered sugar.
