
Blueberry paste
Description
A preservation recipe without unnecessary fuss. To make blueberry paste, I suggest mixing the berries with apples. Use tart-sweet apples if the berries are already ripe and sweet (and vice versa). The paste keeps well in a container in the refrigerator. It’s delicious with yogurt or other fruit. I won’t even get into blueberries’ health benefits—you could talk about those forever.

Cut the apples thinly (you can peel them if you like).

Cover with water and boil until done. Then pass through a sieve.

Mash the blueberries, add a little water, and strain the juice through cheesecloth.

Pour water over the pressed berries and simmer for 5 minutes.

Then strain the broth, add blueberry juice, grated apples, sugar, semolina, and cook, stirring, over low heat for 10 minutes.

Serve with whole blueberries or coconut flakes.
