Description

Black color is characteristic of many well-known dishes: sauce, pasta, paella, or risotto. This color comes from cuttlefish ink, which began to be used in Mediterranean and Adriatic cuisine not so long ago. The ink can be purchased pre-packaged and added during cooking, for example, to pasta dough, or you can buy ready-made black-colored pasta. This ingredient gives the pasta a slight salty, shrimp-like flavor, so it is usually paired with fish or seafood such as squid, mussels, shrimp, octopus, and scallops.

    Clean the fresh mussels and thoroughly rinse them under cold running water.

    Place the mussels in a container with cold water, a small amount of salt, and leave covered for half an hour so that the shells open. Remove any spoiled mussels.

    In a skillet, heat the olive oil and lightly sauté the finely chopped garlic and chili pepper with chopped parsley until fragrant.
