Sweet Cherries with Sugar for Winter

Description

The recipe for preparing cherries with sugar for winter is essentially no different from similar methods used for other berries, except you must add citric acid dissolved in a small amount of clean water, or lemon juice, because cherries themselves contain almost no acid and can spoil quickly. Allow 3 grams of acid per 1 liter. Everything else is in the recipe: 1. Wash the cherries thoroughly, removing small debris and leaves, and pit them. 2. Take clean jars and layer the cherries in them, sprinkling with sugar as you go. 3. It works best on a “one spoonful of berries — one spoonful of sugar” basis; on top, add dissolved citric acid or a few slices of fresh lemon. 4. Place the jars in a pot of boiling water and keep them there for about 5 minutes. Remove from the heat and seal immediately. Store upside down until cool, then move to any dark, cool place. Cherries with sugar for winter, made at home, turn out very juicy and sweet, so they work well as a full dessert in winter, and the syrup is great in herbal teas or as a sauce for desserts and baked goods.
