The pastry is simple and quick to prepare. I don't need cakes or desserts—nothing tastes better to me than these wonderful flatbreads with their delicate filling. Today, I'll be sharing a recipe for chepalgash. This amazing dish from the Chechen Republic has become such a favorite with me and my family that we now make it every weekend, whenever we have the time. The preparation process itself is very interesting and involves several steps: first, frying the flatbreads in a pan, then rinsing them in water, and finally soaking them generously with butter. Overall, making this classic chepalgash recipe goes by quickly and leaves unforgettable impressions.

Step 1

First, prepare the dough by mixing warm kefir with salt, sugar, baking soda, and flour. Next, mix the cottage cheese with an egg and add a little salt—this will be our filling. Divide the dough into 8 equal parts, place the prepared filling in the center of each part, and pinch the edges together so that the filling is completely enclosed inside.

Now roll out the dough with the filling inside into a fairly thin flatbread.

Heat the pan well and place the flatbread on it. Do not add oil.

Fry on both sides until brown spots appear.

Remove the pancake from the pan and quickly dip it into boiled water, rinsing off any burnt parts.

Transfer the flatbread to a pot, generously brush with butter, and cover with a lid. Repeat the same with all the flatbreads.
