
Chebureki with mushrooms and cheese
Description
The pastry is simple and quick to prepare. A cheburek is not just an ordinary turnover. Chebureks are made with a special, very thin dough that becomes crispy when fried, while the filling remains juicy and tender. By the way, a cheburek isn't authentic if it has little filling and too much dough—on the contrary, it should be mostly filling. Classic chebureks are filled with meat, but variations are possible. They can be served with tea or coffee.

Prepare all the necessary ingredients.

Beat the egg with water. You can use regular cold water.

Add the butter and a pinch of salt. Mix everything thoroughly until smooth.

Add the flour and knead a soft dough.

Leave it at room temperature to rest while you prepare the filling.

For the filling, clean the mushrooms and cut them into small cubes. Fry them in a skillet until cooked through, remembering to season lightly with salt. Then mix the cooked mushrooms with grated cheese and stir well.

Divide the dough into 5 equal parts. Roll out each part into a circle. Mentally divide the circle into 2 parts, place the filling on one of the parts, leaving about 1.5–2 cm from the edges.

Cover the filling with the second piece of dough, gently press with your palm, and seal the edges with a fork.

Fry the chebureki in a large amount of well-heated oil. Fry each side for about 2-3 minutes. Make sure the chebureki don't burn; they should have a beautiful golden crust. Serve hot and enjoy!
