
Chebureks like in a cheburek shop
Description
Perfect with tea and coffee. Chebureki is a dish that has rightfully earned the recognition of the people of the Caucasus region. It is also considered Mongolian, Turkic, Crimean, Greek. Nevertheless, culinary history has not answered where chebureki were first made. But one principle has remained the same. Plain dough, meat and onion. It might seem like ordinary pies. But these pies are not baked; they are fried in a large amount of hot oil. Any kind of meat can be used for the filling. And together with a generous amount of onion, we get a hot, aromatic, well‑fried on all sides, juicy dish. Many believe that chebureki with bubbles are achieved only if you add vodka to the dough. I tried dough with vodka and without it and didn’t notice any special difference. In my view, the key is to roll the dough very thin and everything will turn out. Serve warm or cooled. Perfect with tea.

Prepare the ingredients for the chebureks.

Sift the flour into a bowl. It will be enriched with oxygen and rid of excess impurities.

Add salt and hot water.

Add refined sunflower oil.

Knead a sufficiently firm yet elastic dough. Cover it with a towel and let it rest for 15–20 minutes.

While the dough rests, prepare the filling. Wash the pork and parsley, peel the onion and also wash it. Pass it through a meat grinder.

Thoroughly mix the meat, onion, and parsley. Season with salt and pepper to taste. Add 100 ml of boiled, cold water and mix well again.

When the dough has rested, cut off a piece and roll it out into a thin sheet. This dough is good because it doesn’t require adding extra flour while working with it. Cut a small circle with a plate.

Place the meat filling on one half of the circle.

Cover the meat with the second half of the circle and seal the edges of the cheburek. For extra strength, run a fork along the edge.

Pour sunflower oil into a heavy-bottomed pan and heat it. Place the chebureks and fry them on both sides until golden brown.
