Prepare all the ingredients.

If using fresh currants, first sort them and remove the stems. Sprinkle the berries with sugar and let stand for 1 hour so they release their juice.

Transfer the currants to a saucepan. Simmer over medium heat until almost all the liquid has evaporated, about 45-55 minutes.

Grind all the spices in a mortar.
