Pear and cranberry chutney

Description

Minimal ingredients—excellent result. Mix cranberries and sugar in a saucepan, cook over medium-low heat until the berries release their juice, about 8 minutes. Peel and dice pears. Place the diced pears in a bowl and mix with lemon zest and juice. Add orange juice, raisins, and figs to the cranberry mixture. Increase the heat to high. Stirring, add the pears when the mixture begins to bubble. Cook, stirring, until the mixture thickens and the pears turn reddish, about 10 minutes. Transfer to a bowl. Let cool, then chill the chutney in the refrigerator for up to 24 hours. Serve chilled or at room temperature.
