
Chanakhi
Description
The recipe won't take much time. Chakhokhbili is a well-known dish of Georgian national cuisine, which for some reason was very popular in Soviet canteens. Although what was served in canteens wasn't really close to the authentic chakhokhbili. True connoisseurs of Georgian cuisine might dispute the authenticity of my recipe as well, but in any case, it's very close to what Georgians call chakhokhbili :) Good luck. Serve hot.

It all starts with these ingredients.

Cut the tail fat into small pieces.

Take a deep cauldron and place the tail fat on the bottom.

On top, place the lamb cut into fairly large pieces.

On top of the meat, place eggplants cut into fairly large cubes.

Salt, pepper, and place a layer of coarsely chopped tomatoes on top.

Next, coarsely chopped pepper goes into the pot.

Next - onion (no need to chop finely, all the chopping here is quite coarse).

Finally, add the diced potatoes, herbs, and garlic (whole cloves) to the pot. Season again with salt and pepper to taste.

You get a nice little pot like this. Pour a little oil and some water into it.

Cover the pot with a lid and place it on the stove. Bring to a boil, then cook over medium heat for a little over an hour—about 1 hour and 10 minutes.
