
Mushroom chakapuli

Prepare all the ingredients.

Rinse the oyster mushrooms and dry them. Cut into large pieces. Slice the onion into half-rings, and peel the garlic and finely chop it.

Finely chop the green onion and cilantro. For tarragon, remove the tough stems, leaving only the tender leaves.

Heat a deep sauté pan or a heavy-bottomed pot. Add vegetable oil and sauté the oyster mushrooms over high heat for about 5–6 minutes. Water will be released from the mushrooms; continue cooking until they turn golden brown.

Then reduce the heat, add the onion, and cook until soft and translucent.

Add salt, minced garlic, ground black and red pepper. Simmer everything together for 1-2 minutes.

Then pour in the wine and water. Bring to a boil. Reduce the heat and simmer everything together for about 12–15 minutes, covered.
