Description

The drink is quick and easy to prepare. This may not be the simplest recipe for chacha, but it's one of the most successful ones. You'll love the result: the drink is tasty, with a distinct tanginess, and there's no harsh alcoholic taste at all! You'll definitely enjoy this grape chacha. Give it a try!

    1. Let's start making chacha. First, we'll make a yeast starter. To do this, we need to "extract" yeast from grapes. Simply take a jar, sterilize it over steam for about half an hour, then pour in approximately 1.7 liters of boiling water and add 250 grams of sugar. Now wait for the jar to cool down to room temperature, covering the opening with gauze.

    2. Now add the following mixture to the cooled water: 100 milliliters of 40% alcohol solution and crushed grapes. Do not wash the grapes under any circumstances! Cover the jar's opening with gauze and let it sit at room temperature for a week. Stir once or twice a day, but do not use your hands—use a clean stirrer.

    3. Now crush the remaining grapes without washing them, add water, sugar, and our prepared yeast starter. Place under an airlock and let it ferment for about a month. Don't forget to shake the container once a day and submerge the floating pomace.

    4. That's not all! Now strain the pomace through cheesecloth. It can be reused following the same recipe, but with slightly less sugar. Let the remaining must sit for a few more days so the sediment can settle.

    5. Now we proceed to distillation. The first batch is the classic base for chacha. Dilute with water to the desired strength—and let it sit in bottles for at least a month.
