
Guinea fowl by the original recipe
Description

First, thoroughly rinse the guinea fowl carcasses under water. Generously rub the guinea fowl all over with salt, pepper, and spices, making sure to season the inside as well.

Pour a small amount of vegetable oil into a roasting pan and place the guinea fowl carcasses in it. Sear until golden brown, remembering to turn them.

When the guinea fowls acquire a noticeable golden crust, add hot water to them and simmer in this form, covered.

Meanwhile, peel and slice the red onion. When the broth comes to a boil, add it to the quails.

When the meat starts to separate from the bones, finely chop dill, cilantro, and parsley, and add them to the quails. Cover with a lid and simmer together for another 10 minutes.
