Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Preheat the oven to 230 degrees together with a baking stone. If you don’t have a dedicated stone, you can preheat a lidded ceramic baking dish instead.
- 3
Step 3

Mix all dry ingredients.
- 4
Step 4

Make a well in the dry mixture and pour the ryazhenka into the well.
- 5
Step 5

Knead the dough; do not knead it for long, so the bubbles that form in the dough while the baking soda reacts stay intact. Let stand for 15 minutes.
- 6
Step 6

Shape the bread to a height of approximately 6–7 cm. Make a cross-shaped slash on top.
- 7
Step 7

Take the hot baking dish out of the oven, following safety precautions—it is very hot. Place the bread in it and cover with a lid.
- 8
Step 8

Bake the bread for 15 minutes with the lid on, then remove the lid, lower the temperature to 200 degrees and bake for another 30 minutes.
- 9
Step 9

Cool the finished bread on a rack.
- 10
Step 10

Bread that has cooled to room temperature can be served.
- 11
Step 11

The bread turned out fragrant and delicious, and it’s completely yeast-free—as usual, here’s a look at the crumb.
