
Whole grain galette
Description
Whole grain flour is perfect for making galette. The baked product turns out crumbly, tasty, and healthy. Use sweet, flavorful pumpkin and apples with a hint of acidity. Adjust the amount of sugar to your taste. My pumpkin is sweet, so I use 3–4 tablespoons of sugar. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Put 50 g of butter in a bowl and add a spoonful of sugar.

Pour the tincture. You can use cognac or another strong alcohol with a pleasant aroma. I have a homemade berry tincture.

Slightly heat the contents of the bowl and mix well.

Add the flour in batches. Stir and add more if needed. It takes about a cup (250 ml) of whole‑grain flour.

We knead a soft dough and leave it in the bowl.

Prepare the filling. Place 20 g of butter in a skillet, then add ginger and cinnamon. Put it over the heat.

Clean the pumpkin, cut it into pieces, and dump it into a pan.

Add sugar and stir. Cook over low heat for about 10-12 minutes.

While the pumpkin is cooking, let's work on the dough. Place the dough ball on parchment, then shape it into a circle and roll it out with a rolling pin to a thickness of 2 mm.

Into the prepared pumpkin, add sliced apples and chopped nuts. Mix everything.

Place the filling on the dough.

We lift the edges of the dough and wrap them around the filling. Bake at 180 °C for about 20 minutes.
