Royal Yeast Pancakes
Description
If you have never made royal yeast pancakes before, I strongly recommend filling that gap, as the pancakes turn out very tasty, somewhat similar to fritters. The recipe is simple; the step‑by‑step instructions detail how to prepare them.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Dissolve the yeast in warm water.
- 3
Step 3

Add half of the flour, knead the starter, and let it ferment for 40–45 minutes.
- 4
Step 4

Separate the egg yolk and white, add salt and sugar to the yolk, and stir.
- 5
Step 5

Pour the mixture of egg yolk, sugar, and salt into the risen pre‑ferment.
- 6
Step 6

Add the remaining flour, stir, and you’ll get a very thick dough.
- 7
Step 7

Heat the milk to about 80 degrees and pour it into the dough. The milk should be very hot.
- 8
Step 8

Whisk the dough with a mixer until smooth.
- 9
Step 9

Whisk the egg white into a foam, then fold it into the dough.
- 10
Step 10

Let the dough rise again; this will take about 15–20 minutes. Use a larger bowl, as the dough will rise actively.
- 11
Step 11

Fry the pancakes on a preheated skillet on both sides, first greasing with vegetable oil. Stack the finished pancakes, spreading butter on top.
- 12
Step 12

Serve the pancakes hot, with jam, with honey, with condensed milk, however you like. It's very tasty!
