
Quick Breakfast
Description
The appetizer is quick and easy to prepare. I'm sharing a variation on bruschetta, the Italian open-faced sandwich. The main difference from our usual dish is the presence of fresh vegetables. They are all combined with a topping or sauce on baguette, which is baked in the oven until crispy. A hearty, tasty, and hot breakfast in just a few minutes. Can be served warm or chilled.

Step 1

Brush the loaf with 2 tablespoons of melted butter. Place it on a baking sheet in the oven at 200°C for 5 minutes, then bake for another 3 minutes on the other side.

Beat the chopped onion with the eggs, milk, and pepper. Fry the mixture in hot oil, stirring.

Mash the avocado into a puree. Spread it on the bread slices.

Place the egg mixture and tomato pieces on the avocado. All done! Enjoy a hearty and delicious breakfast!
