
Quick Berry Pie
Description
Perfectly pairs with tea and coffee. This pie tastes even better when made with a mix of different berries. I baked mine using gooseberries and currants. A combination of black currants and raspberries works wonderfully as well. You can also bake the pie with fresh berries, reducing the baking time by a minute or two. Serve with tea or coffee.

Prepare the ingredients.

Beat the eggs with sugar until the volume triples.

While continuing to whisk, slowly pour in the vegetable oil in a thin stream.

Mix the flour with the baking powder and salt. Sift into the bowl with the egg mixture.

On low mixer speed, incorporate the flour. Add the condensed milk and mix gently.

Add a cup of frozen berries to the dough. Mix well.

Place the dough into a lightly greased microwave-safe dish. Arrange the remaining berries on top.

Bake the cake in the microwave at 800 W for 5 minutes. Let it stand for another 5 minutes. Check doneness with a wooden skewer. If necessary, bake for an additional minute at half power.
