
Quick Apple Roll with Lingonberries
Description
The recipe won't take much time. Usually a sponge roll is prepared separately from the filling or cream. In this roll everything is done in one go. It's best to use tart‑sweet apples. If you don't have lingonberries, you can substitute them with dried cranberries, raisins, or sliced dried cherries. You can also choose nuts according to your taste. The pastry is ready. Serve at the table.

Prepare all the necessary ingredients for making a quick apple roll with lingonberries.

Coarsely chop the walnuts and toast them in a dry pan for 5 minutes over low heat.

Wash the eggs and crack them into clean, cold cookware. I use a 1‑liter pot.

Add sugar and a small pinch of salt to the eggs.

Whisk the eggs with sugar for 5–6 minutes until a fluffy mixture forms.

Sift the flour through a fine sieve and add it to the egg mixture. I usually sift directly into the bowl with the mixture.

Carefully mix with a spatula until smooth. Do not mix for too long, so that air bubbles do not burst and the sponge remains tender.

Line a small baking sheet with parchment paper. Peel the apples, removing the core and skin. Grate the apples using a coarse grater and squeeze out the juice. Spread the apples on the paper in an even layer.

Spread the lingonberries evenly over the apple layer.

Arrange the toasted nuts on the apple layer with lingonberries.

Pour the resulting sponge cake batter onto the top of the apple layer and smooth it out. The easiest way to do this is with a plastic spatula.

Bake in a hot oven at 180 °C for 25–30 minutes, until done.

Moisten a clean towel and wring it out well. Lay the towel on the table and flip the sponge cake so that the paper is on top. Run a damp cloth or wet hands over the surface of the paper and remove it.

Using a towel, tightly roll the roulade and let it cool.

Unfold the towel and place the roll on the cutting board seam side down. Dust with powdered sugar and decorate as you wish.
