Quick pie with frozen berries

60 min4 serv.21 февр. 2026 г.

Description

Homemade baked goods for tea. The pie made according to my recipe stays fresh for a long time and doesn't become stale. Moreover, it doesn't lose its flavor at all. You can use any berries or various fruits as filling—fresh, frozen, or canned. Just make sure not to pour the juice from the berries into the batter, as the excess liquid might prevent the pie from rising properly. These pies are perfect to keep at home instead of buying cookies at the store. Very convenient. Serve cooled or slightly warm.

Instructions

Pour a glass of kefir into a deep bowl. Add a glass of sugar. Mix well. Melt the butter and pour it into the kefir.

Break the eggs into a bowl and beat. Add baking soda and vanilla. By the way, you can replace the baking soda with baking powder (1 packet). Sift in the flour and mix into a thin batter.

I have various supplies left over from summer. Not just canned goods. I often store berries, vegetables, and fruits in the freezer. For example, persimmon loses its astringency after freezing. I'm adding 1 cup of frozen black currants to the dough; the rest I'll save for later.

Now take out a baking pan with high edges. Line it with parchment paper, or simply grease it with oil. Pour the batter into the pan. Sprinkle with the remaining berries (if any) and dust with sugar. Bake at 180 degrees for 35-40 minutes.

When you see through the oven glass that the pie has darkened and the berries have wrinkled, it's ready to be taken out. Don't forget to brew some tea, as the pie is sweet!
