
Quick Cherry Pie
Description
The recipe won't take much time. For making a quick cherry pie, you can use either fresh or frozen cherries. By the way, we'll also need cherry juice, which you can extract from the berries or simply use store-bought. Make a classic shortcrust pastry—ready-made dough works fine too; I usually do this to save time. The baking is ready. Serve at the table.

Wash the berries.

In a saucepan, mix the starch, sugar, and a pinch of salt.

Place over heat, stir gently, mix the juice with water in equal proportions, and add to the dry mixture, constantly stirring.

Continue stirring, bringing to a boil, always over low heat. The mixture should thicken in the end.

You can also whisk it occasionally while cooking. Then add the berries and simmer over low heat for just one or two minutes. After that, let it cool down.

While the berries are cooling, prepare the dough or roll out the ready-made one to fit the pan. Leave edges for the sides.

Place the berries inside and start making the lattice.

Strips about one centimeter wide.

Trim the excess and make neat edges.

Preheat the oven, then brush the pie with egg yolk and sprinkle with sugar if desired.
